The History of Moonshine 

To today's generation it may be surprising, but moonshine used to be illegal to produce. 

In the 18th century, immigrants from Scotland and Ireland settled in the southern United States, ready and willing to use the bountiful natural resources around them to make whiskey. However, anyone making and selling whiskey was taxed by the government. To avoid having to pay the tax, distillers called "moonshiners" would distill their liquor in the dead of night, under the shine of the moon, hence, the name "moonshine" (or so rumor has it).

In short, moonshine is a whiskey that is aged differently than more traditional whiskey. Because there is no opportunity to cover the strong flavor in the aging process, moonshine is difficult to make well. As a result, modern moonshine distilleries are spiking their moonshine with flavors like maraschino cherry, peach, and blood orange. 

Today, making moonshine is no longer illegal — if done so in accordance with the law, of course — but the lore and the mystery of moonshine distilling remain. It's a spirit rooted heavily in the southern U.S., evidenced by the numerous moonshine brands owned and operated by distilleries there. When paired with the right mixer, though, it takes the edge off the moonshine, making for a smoother and more enjoyable drink.
