This Cuvee bears the name of 2 so-called places located in Ecueil on the hillsides. These are 2 plots of these places which serve as a basis for the development of this Cuvee. Nearly 40 years old, the vines develop concentrated grapes with muscat notes as the harvest approaches. The production of this Cuvee is reduced and remains reserved for the most interesting vintages. Endowed with a natural balance, this Cuvee is only sold in Extra-Brut. Made exclusively from Chardonnay, this Cuvee is vinified in barrels and then aged for around 6 months with stirring. Malolactic fermentation is not required to preserve the freshness of this wine. A deep yellow color and fine bubbles with a harmonious release form a delicate disc. The nose is powerful with light woody notes, great frankness in the aromas: notes of candied citrus fruits and chalk, candied orange peel. In the mouth, we are surprised by the freshness of the wine. We find a mouth of beautiful complexity which confirms the olfactory sensation, a great harmony. The feeling of balance dominates, in the finish we remain with liquorice notes.
